I used to buy jalapeƱos, slice them up, and let them sit in a jar for three days before they tasted like anything other than raw pepper. Then I started using hot vinegar and letting the mixture sit overnight, and suddenly those pale green rings turned translucent and tangy enough to cut through rich tacos or creamy guacamole.

Ingredients
  

Peppers
  • 2 large jalapeƱo peppers about 6 oz, thinly sliced
Brine
  • 1 cup distilled white vinegar 5% acidity
  • 0.5 cup water
  • 1 tablespoon kosher salt
  • 1 tablespoon sugar
Aromatics
  • 3 cloves garlic smashed and peeled

Method
 

  1. Prep the peppers: Wash and dry the jalapeƱos. Remove stems and slice them into very thin rings or half-moons. If you prefer less heat, scrape out the seeds before slicing. Place the sliced jalapeƱos into a clean, heat-proof jar or glass bowl.
  2. Add aromatics: Toss the smashed garlic cloves in with the peppers. This infuses the brine with subtle flavor without overwhelming the sharpness of the vinegar.
  3. Heat the brine: In a small saucepan, combine the distilled white vinegar, water, salt, and sugar. Bring to a boil over medium-high heat, stirring constantly until the salt and sugar are completely dissolved. You will see steam rising as it hits the boiling point.
  4. Pour and seal: Carefully pour the hot liquid directly over the peppers in your jar, ensuring they are fully submerged. Tap the jar gently on the counter to release any trapped air bubbles.
  5. Cool and store: Let the jar cool to room temperature before sealing it tightly with a lid. Refrigerate immediately. The pickles will be ready to eat after at least 24 hours for optimal flavor, though they are edible sooner.

Notes
