I used to toss vegetables into the oven haphazardly, ending up with soggy wedges and charred edges. The turning point was realizing that size consistency matters more than any fancy seasoning blend. I now cut everything into uniform one-inch pieces so they roast at the same rate.

Ingredients
  

Vegetables
  • 1 lb broccoli florets cut into uniform bite-sized pieces
  • 1 large red bell pepper seeded and cut into 1-inch squares
  • 1 medium red onion cut into 1-inch wedges
  • 1 lb baby potatoes halved if large or quartered if small
Seasoning & Oil
  • 3 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 0.5 tsp freshly ground black pepper
  • 0.5 tsp garlic powder
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Preheat your oven to 425°F (220°C). Line a large, rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Place the prepared vegetables on the baking sheet. Ensure they are spread out in a single layer with some space between pieces; overcrowding will cause them to steam rather than roast.
  3. Drizzle the olive oil evenly over the vegetables. Sprinkle the kosher salt, black pepper, garlic powder, and red pepper flakes over everything. Use your hands or two spatulas to toss until every piece is lightly coated but not swimming in oil.
  4. Roast for 20–25 minutes. Halfway through (around the 10-minute mark), pull the sheet out and flip/toss the vegetables to ensure even browning on all sides.
  5. The vegetables are done when the edges are deeply caramelized and crisp-tender, and a fork easily pierces the potatoes. They should have browned spots but remain vibrant in color. Remove from oven immediately to prevent overcooking.
