I finally stopped overcomplicating my fish dinners after realizing that simple breading yields the best texture. Trout schnitzel is delicate but holds up well in a hot pan if you don't crowd it.

Ingredients
  

For the Trout Schnitzel
  • 4 trout fillets approx. 6 oz each, pin bones removed and patted dry
  • Salt and freshly ground black pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten with a pinch of salt
  • 1 cup fine dry breadcrumbs Panko works best for extra crunch
  • Vegetable or canola oil for frying
For the Crispy Spaetzle
  • 2 cup all-purpose flour
  • 3 large eggs
  • 1/2 tsp salt
  • 1/4 tsp nutmeg optional, but traditional
  • 6-8 tbsp water or milk
  • 3 tbsp unsalted butter
  • 2 green onions thinly sliced (for garnish)

Method
 

  1. Make the Spaetzle Batter:
  2. In a large bowl, whisk together the flour and salt. Make a well in the center and crack the eggs into it. Add nutmeg if using.
  3. Gradually add water or milk, one tablespoon at a time, whisking constantly until you have a smooth, thick batter. It should resemble thick pancake batter; adjust liquid as needed. Let rest for 15-30 minutes while you prep the trout.
  4. Bread the Trout:
  5. Set up a breading station: one plate with flour seasoned with salt and pepper, one bowl with beaten eggs, and one plate with breadcrumbs.
  6. Pat trout fillets very dry. Dredge each fillet in flour (shake off excess), dip into egg wash, then press firmly into breadcrumbs to coat evenly on both sides. Place on a wire rack.
  7. Cook the Spaetzle:
  8. Bring a large pot of salted water to a boil. Heat a non-stick spaetzle maker or colander with holes over the pot (or use a bowl and spatula if you don't have a maker).
  9. Spoon or pipe small portions of batter into the boiling water. They will sink, then rise when cooked through (about 2-3 minutes). Remove immediately with a slotted spoon. Do not overcrowd the pot; cook in batches.
  10. Fry the Schnitzel:
  11. In a large skillet, heat about 1/4 inch of oil over medium-high heat until shimmering but not smoking. Test by dropping a pinch of breadcrumbs; they should sizzle immediately.
  12. Fry trout fillets for 3-4 minutes per side until golden brown and crispy. The internal temperature should reach 145°F (63°C). Transfer to a paper towel-lined plate to drain excess oil.
  13. Crisp the Spaetzle & Serve:
  14. In a separate large skillet, melt butter over medium heat. Add cooked spaetzle in a single layer. Let sit undisturbed for 2-3 minutes until crispy and golden on one side, then flip/toss to crisp other sides.
  15. Garnish with sliced green onions. Serve schnitzel alongside or on top of the crispy spaetzle.

Notes

The spaetzle ties everything together with its chewy, buttery contrast to the crispy cutlet. I learned early on that letting the batter rest prevents tough noodles, so I always mix mine an hour ahead.
