- Add aromatics: Toss the smashed garlic cloves in with the peppers. This infuses the brine with subtle flavor without overwhelming the sharpness of the vinegar.
- Heat the brine: In a small saucepan, combine the distilled white vinegar, water, salt, and sugar. Bring to a boil over medium-high heat, stirring constantly until the salt and sugar are completely dissolved. You will see steam rising as it hits the boiling point.
- Pour and seal: Carefully pour the hot liquid directly over the peppers in your jar, ensuring they are fully submerged. Tap the jar gently on the counter to release any trapped air bubbles.
- Cool and store: Let the jar cool to room temperature before sealing it tightly with a lid. Refrigerate immediately. The pickles will be ready to eat after at least 24 hours for optimal flavor, though they are edible sooner.
