Sticky chicken thighs with lemon and honey

No ratings yet
When I first made this dish during a particularly exhausting week of back-to-back errands, the kitchen smelled like someone had opened a jar of honey and set it beside a lemon tree. I'd been meaning to try thighs instead of breasts — they're cheaper, more forgiving, and actually stay juicy in my oven — and once I saw how the glaze pooled around them in the pan, I knew this was going to become one of those recipes that quietly earns its place.

Ingredients

For the chicken
  • 4 bone-in skin-on chicken thighs (about 1½ pounds)
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil
For the glaze
  • â…“ cup honey
  • 3 tablespoons fresh lemon juice about 1 large lemon
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon red pepper flakes

Method

  1. Prep the chicken. Pat the thighs completely dry with paper towels — this is crucial for getting crispy skin. Season generously on both sides with salt and pepper (about ¾ teaspoon salt total).
  2. Sear the chicken. Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering. Place thighs skin-side down, leaving space between them. Cook undisturbed for 5-6 minutes until the skin is deeply golden and releases easily from the pan. Flip and cook 3 more minutes on the other side. Remove to a plate.
  3. Make the glaze. Reduce heat to medium-low. Add garlic to the skillet and cook 30 seconds until fragrant. Pour in honey, lemon juice, soy sauce, thyme, and red pepper flakes. Stir to combine, scraping up any browned bits from the bottom of the pan with a wooden spoon.
  4. Finish in the oven. Nestle the chicken thighs back into the glaze, skin-side up. Transfer skillet to an oven preheated to 425°F. Bake 18-20 minutes until internal temperature reaches 165°F at the thickest part (no bone) and juices run clear.
  5. Rest and serve. Let rest 3-4 minutes before serving. The glaze will be thickened but still pourable — spoon it generously over everything on your plate. Garnish with lemon wedges if you like extra brightness.

Notes

The trick I keep coming back to is browning the chicken before adding the sauce. Most people dump everything together at once and get a pale, soggy mess, but getting even color on the skin first creates this little caramelized layer that catches the glaze beautifully. It takes maybe two extra minutes of attention, and you can see exactly when it's done because the edges turn golden and the surface starts to look almost glassy.
I serve it with whatever is already in my fridge — usually some roasted vegetables or just a spoonful of rice — but the lemon-honey sauce is so good I've been known to eat it straight off a crusty piece of bread. It keeps well for three days, and honestly reheats even better than the first day because the flavors have time to meld together.
