I used to pile chips into a shallow bowl only to end up with soggy edges and cold centers. Switching to a single layer on a rimmed baking sheet fixed the texture problem instantly, keeping every crisp edge intact while the cheese melted perfectly.

Ingredients
  

The Base
  • 1 bag approx. 12 oz sturdy tortilla chips, preferably thick-cut or restaurant style
  • 1 tbsp vegetable oil or olive oil
The Meat & Beans
  • 1 lb ground beef 80/20 fat ratio works best for flavor
  • 1 packet 1 oz taco seasoning mix
  • ½ cup water for cooking the meat
  • 1 can 15 oz black beans, drained and rinsed
  • 1 tbsp chili powder
The Fixings
  • 2 cups shredded Mexican blend cheese or sharp cheddar for better melt
  • 1 cup frozen corn kernels thawed
  • ½ cup diced green onions
  • ½ cup diced tomatoes seeded to reduce moisture
  • ¼ cup sliced black olives
  • ½ avocado diced
For Serving
  • ½ cup sour cream
  • ½ cup salsa
  • Fresh cilantro leaves for garnish

Method
 

  1. Preheat and Prep: Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with aluminum foil or parchment paper for easy cleanup. Spread the tortilla chips in a single, even layer on the prepared sheet.
  2. Toast the Chips: Bake the chips alone for 3-4 minutes until they are lightly golden and fragrant. This step is crucial for preventing sogginess. Watch them closely so they don't burn. Remove from the oven but leave the oven on.
  3. Cook the Meat: While chips toast, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and no longer pink (internal temperature of 160°F / 71°C). Drain excess fat if desired, but leave about 1 tablespoon for flavor.
  4. Season: Stir in the taco seasoning and water into the beef. Simmer for 2-3 minutes until the liquid reduces to a thick glaze that coats the meat. Stir in the drained black beans and chili powder to warm them through. Remove from heat.
  5. Assemble Layer 1: Return the toasted chips to the oven rack or counter. Sprinkle half of the shredded cheese evenly over the chips. Carefully spoon half of the beef and bean mixture over the cheese. Top with half of the corn, tomatoes, and olives.
  6. Melt: Place the baking sheet back in the oven for 5-7 minutes, just until the cheese is fully melted and bubbly. Do not over-bake or the chips will soften excessively.
  7. Assemble Layer 2 (Optional but Recommended): Remove from oven. If you have remaining ingredients, add a second thin layer of cheese, meat mixture, and veggies on top for extra indulgence. Return to oven for another 2-3 minutes if adding a second layer.
  8. Final Touches: Immediately top with diced avocado, green onions, and fresh cilantro. Serve hot with sour cream and salsa on the side to keep dips separate until eating.

This dish has earned its place in my rotation because it’s forgiving and fast. The key is toasting the chips briefly before adding toppings; this creates a barrier against moisture so they stay crunchy under the heavy loads of beans and meat.
