I discovered this cake during a particularly ambitious attempt at something fancier, when I accidentally overbaked it and pulled out a deep, dark crust with a crackly top that gave way to an impossibly tender interior. The texture was the thing — less like cake, more like eating warm chocolate ganache in solid form.

Ingredients
  

Dry Ingredients
  • 2 cups 400g all-purpose flour
  • 1 cup 90g unsweetened cocoa powder, sifted
  • 3 cups 600g granulated sugar
  • 1 tbsp baking soda
  • 1 tsp salt
Wet Ingredients
  • 3 large eggs room temperature eggs
  • 2 cups 480ml buttermilk
  • 1 cup 240ml vegetable oil
  • 2 tsp vanilla extract
Additional
  • 1 cup boiling water boiling water

Method
 

  1. Heat your oven to 350°F and grease two 9-inch round cake pans with butter, then dust with flour or line the bottoms with parchment rounds for easy removal.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt until completely combined — you want no lumps of dry ingredients remaining.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Using an electric mixer on medium speed, beat for about 2 minutes until smooth and well incorporated.
  4. Pour in the boiling water and mix on low just until combined — the batter will be quite thin and almost soupy at this point, which is completely normal. Don't overmix; stop as soon as you no longer see streaks of flour.
  5. Let the batter rest for 10 minutes while your pans finish heating up in the oven. This resting period lets the cocoa powder soften and hydrate fully.
  6. Pour the batter evenly into your prepared pans (it should fill them about three-quarters full). Bake at 350°F for 45–50 minutes, or until a toothpick inserted into the center comes out with moist crumbs clinging to it but no wet batter.
  7. Cool in the pans on wire racks for 15 minutes before turning the cakes out. Allow them to cool completely before stacking and frosting — at least 30 minutes total cooling time works well if you're not in a rush.
  8. Once cooled, frost as desired with chocolate buttercream or your favorite icing. Store covered at room temperature for up to three days, or refrigerate for longer storage (bring to room temperature before serving).

Notes

I've made this dozens of times now, sometimes for company when I want something that looks impressive without looking like I tried too hard, and sometimes just because it's what my family actually asks for. The secret is letting the batter rest while you heat the oven — the flour has time to hydrate fully, which makes a noticeable difference in tenderness.
This cake keeps well on the counter for three days wrapped tightly, though I usually have it gone by then. A dusting of powdered sugar and a dollop of whipped cream or vanilla ice cream are all you really need.
