I learned the hard way that pineapple needs to be dry before it hits the pan. Ingredients
  

For the Pork Chops:
  • 2 boneless pork chops about 6 oz each, trimmed of excess fat
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tbsp neutral oil such as vegetable or canola
For the Pineapple Fried Rice:
  • 3 cups cooked jasmine rice preferably day-old and chilled
  • 2 eggs lightly beaten
  • 1 tbsp neutral oil
  • 1 cup fresh pineapple chunks patted very dry
  • 1/2 cup frozen peas and carrots thawed
  • 3 green onions thinly sliced (white and green parts separated)
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 2 tbsp soy sauce
  • 1 tsp sesame oil

Method
 

  1. Season the pork: Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper. Let them sit at room temperature for about 10 minutes while you prep the other ingredients.
  2. Sear the pork: Heat a large skillet or cast-iron pan over medium-high heat. Add the oil. Once the oil shimmers, add the pork chops. Cook for 4-5 minutes per side until golden brown and cooked through. The internal temperature should reach 145°F (63°C). Transfer to a plate and tent loosely with foil while you make the rice.
  3. Scramble the eggs: Wipe out the skillet if needed, then return it to medium heat. Add another teaspoon of oil if the pan looks dry. Pour in the beaten eggs. Scramble gently until just set but still soft, about 1-2 minutes. Remove eggs from the pan and set aside with the pork.
  4. Fry the aromatics and veg: In the same skillet, add the remaining tablespoon of oil. Add the white parts of the green onions, garlic, and ginger. Sauté for 30 seconds until fragrant. Add the pineapple chunks and thawed peas/carrots. Stir-fry for 2 minutes until the pineapple begins to caramelize slightly at the edges.
  5. Fry the rice: Increase heat to medium-high. Add the chilled rice, breaking up any clumps with a spatula. Press the rice against the side of the pan and let it sit for 1 minute before stirring to get some crispy bits. Stir in the soy sauce until evenly distributed.
  6. Combine: Return the scrambled eggs and pork chops (chopped into bite-sized pieces) to the skillet. Add the sesame oil. Toss everything together gently, heating through for another minute. Taste and adjust seasoning with more salt or pepper if needed.
  7. Serve: Transfer to plates and garnish with the green parts of the green onions. Serve immediately while hot.
