I started making these when I was trying to figure out how to roast a whole turkey without committing to the whole bird. I bought two legs on sale at Costco, rubbed them with salt and pepper, and slid them into the oven. What came out were these thick, juicy cylinders of meat that looked ridiculous in the best way — like something you'd find at a county fair but actually taste better than most.

Ingredients
  

Turkey Legs
  • 2 turkey legs about 1 lb each, skin-on
Seasoning Mixture
  • 4 tbsp unsalted butter melted
  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp onion powder

Method
 

  1. Preheat your oven to 375°F. Place the turkey legs on a cutting board and pat them dry with paper towels — this helps the skin crisp up later.
  2. In a small bowl, whisk together the melted butter, salt, pepper, garlic powder, smoked paprika, and onion powder until well combined.
  3. Brush the mixture generously over both turkey legs, making sure to get it under the skin where possible. If any spice mix remains, rub it into the meat.
  4. Place the turkey legs on a roasting pan or baking sheet, bone-side down. Roast in the preheated oven for 75–90 minutes.
  5. Check that the internal temperature of the thickest part of the leg reaches at least 165°F (I usually pull them around 170-175°F since they'll carry over a few degrees while resting). The skin should be deep golden and crispy.
  6. Remove from the oven, tent loosely with foil, and let rest for 10 minutes before serving. Slice meat off the bone or serve whole — your call.

Notes

The name "caveman pops" comes from how they look: just big pieces of meat on bones, no fuss. They're genuinely easy to make because there's almost nothing to prep. I rub them with butter and spices, then roast them until the skin crisps up. The fat renders out while the meat stays tender. What makes a real difference is letting them rest for ten minutes after they come out of the oven — it gives the juices time to redistribute so you're not losing all that flavor when you cut into one.
I keep making these because they're forgiving and filling, and honestly because they look fun on the dinner table. Serve them with something simple like mashed potatoes or just a green salad. They reheat well too — warm them in the oven at 350 for about fifteen minutes if you have leftovers.
