- Season the pork: Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper. Let them sit at room temperature for about 10 minutes while you prep the other ingredients.
- Sear the pork: Heat a large skillet or cast-iron pan over medium-high heat. Add the oil. Once the oil shimmers, add the pork chops. Cook for 4-5 minutes per side until golden brown and cooked through. The internal temperature should reach 145°F (63°C). Transfer to a plate and tent loosely with foil while you make the rice.

Add the pineapple chunks and thawed peas/carrots. Stir-fry for 2 minutes until the pineapple begins to caramelize slightly at the edges.
- Fry the rice: Increase heat to medium-high. Add the chilled rice, breaking up any clumps with a spatula. Press the rice against the side of the pan and let it sit for 1 minute before stirring to get some crispy bits. Stir in the soy sauce until evenly distributed.
- Combine: Return the scrambled eggs and pork chops (chopped into bite-sized pieces) to the skillet. Add the sesame oil. Toss everything together gently, heating through for another minute. Taste and adjust seasoning with more salt or pepper if needed.
- Serve: Transfer to plates and garnish with the green parts of the green onions. Serve immediately while hot.
