I first made these pistachio-chocolate shortbreads when I needed a dessert that looked elegant but required zero active attention. The aroma of toasted nuts filling the kitchen was enough to convince me they belonged in my permanent rotation.

  • 1 cup unsalted butter 2 sticks, softened to room temperature
  • ½ cup powdered sugar confectioners’ sugar, sifted
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • ½ cup pistachios finely ground unsalted
  • ½ cup semi-sweet chocolate chips or chopped dark chocolate

Method
 

  1. In a large bowl, beat the softened butter and powdered sugar together with an electric mixer on medium speed until pale and creamy, about 2 minutes. Mix in the vanilla extract.
  2. Add the flour, salt, and ground pistachios to the butter mixture. Beat on low speed just until combined; do not overmix, or the cookies will become tough. Fold in the chocolate chips by hand using a spatula.
  3. Divide the dough into two equal portions. Shape each portion into a flat rectangle (about 1-inch thick) on a sheet of parchment paper. Wrap tightly in plastic wrap.
  4. Refrigerate for at least 2 hours, or until firm enough to slice cleanly. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  5. Remove one dough rectangle from the fridge. Using a sharp knife, cut crosswise into slices about ¼-inch thick. Place them on the prepared baking sheets, leaving 1 inch of space between each cookie.
  6. Bake for 12–14 minutes, or until the edges are just barely golden and the centers feel set. The cookies will firm up as they cool. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Chilling the dough is non-negotiable here; it prevents spreading and keeps those beautiful green crumbly textures intact while you slice them into uniform rounds. I find that letting them rest overnight yields the sharpest edges, though two hours works if you’re impatient.
