  3. Add Flavorings: Mix in the vanilla extract. Scrape down the sides of the bowl to ensure everything is evenly combined.
  4. Combine Dry Ingredients: In a separate medium bowl, whisk together the flour, baking powder, ground ginger, and salt.
  5. Form Dough: Gradually add the dry ingredients to the wet mixture on low speed. Mix just until the dough comes together into a cohesive ball. Do not overmix, or the cookies will become tough.
  6. Chill (Crucial Step): Divide the dough into two portions and wrap them in plastic wrap. Refrigerate for at least 30 minutes. This firms up the butter so the cookies hold their thumbprint shape.
  7. Shape: Roll the chilled dough into 1-inch balls (about 1 tablespoon each) and place them 2 inches apart on the prepared baking sheets. Press your thumb firmly but gently into the center of each ball to create a well, about 1/2 inch deep. If the dough cracks, simply pinch it back together with wet fingers.
