For the Pear Sorbet:

  2. Blend the Puree: Place the chopped pears in a blender or food processor. Add the cooled simple syrup and vanilla extract. Blend until completely smooth, about 1-2 minutes. If there are large fibrous bits remaining, strain the mixture through a fine-mesh sieve to ensure a silky sorbet texture.
  3. Chill Thoroughly: Transfer the pear puree to an airtight container and refrigerate for at least 4 hours, or ideally overnight. The mixture must be very cold (below 40°F/4°C) before churning for best results.
  4. Churn the Sorbet: Pour the chilled pear mixture into your ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes. The sorbet will look soft-serve consistency when done. Transfer to a freezer-safe container and freeze for at least 1 hour to firm up before serving.
  5. Prepare the Goat Cheese: While the sorbet chills or freezes, place the softened goat cheese in a small bowl. Whisk in the honey and chopped thyme until smooth and creamy. If it is too thick, add 1 teaspoon of warm water to loosen it slightly. Shape into small dollops or keep as a spreadable mixture.
  6. Serve: Scoop the sorbet into bowls or glasses. Top with a generous dollop of the honey-goat cheese mixture. Drizzle lightly with extra honey if desired. Serve immediately.
