I finally stopped fighting the yolk. For years, I’d flip sunny-side up eggs only to end up with a broken, messy scramble that looked nothing like the photos. Then one morning, I lowered my heat, added a tiny splash of water, and covered the pan for exactly thirty seconds. The whites set without browning, and the yolk stayed perfectly glossy. Eggs
  • 2 large eggs fresh room temperature works best
Fat
  • 1 tablespoon unsalted butter or olive oil
Seasoning
  • Salt and freshly cracked black pepper to taste

Method
 

  1. Heat a small non-stick skillet over medium-low heat. Add the butter or oil and swirl to coat the bottom. Wait until the butter foams slightly but does not brown.
  2. Crack the eggs gently into the pan, trying to keep the yolks intact. If using butter, listen for a gentle sizzle; if it’s screaming, your heat is too high.
  3. Let the eggs cook undisturbed for about 1–2 minutes. Watch closely as the whites transition from clear to opaque white around the edges while staying translucent near the yolk.
  4. Once the whites are mostly set but still slightly jiggly in the center, add 1 teaspoon of water to the pan and immediately cover with a lid. This steam finishes cooking the top of the whites without flipping.
  5. Cook for another 30–60 seconds until the whites are fully set and the yolk is still runny but warm. Remove from heat.
  6. Slide onto a plate, season generously with salt and pepper, and serve immediately.
