  • 3/4 cup granulated sugar plus extra for rolling

  • 1 tsp pure vanilla extract

  • 1/4 cup unsweetened cocoa powder natural or Dutch-process
  • 1 tbsp instant espresso powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Method
 

  1. Whisk dry ingredients: In a small bowl, whisk together the flour, cocoa powder, instant espresso powder, baking soda, and salt. Set aside. Ensure there are no lumps in the cocoa or espresso.
  2. Cream butter and sugar: Using a hand mixer or stand mixer fitted with the paddle attachment, beat the softened butter and 3/4 cup of granulated sugar on medium-high speed for about 3-4 minutes, until the mixture is light, fluffy, and pale in color. This step incorporates air essential for texture.
  3. Add wet ingredients: Beat in the egg one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract. Scrape down the sides of the bowl with a spatula to ensure even mixing.
  4. Combine mixtures: Reduce mixer speed to low. Gradually add the dry ingredient mixture to the wet ingredients. Mix just until combined; do not overmix, or the cookies will be tough. The dough should look thick and slightly crumbly but hold together when pressed.
  5. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 24 hours. Chilling is crucial here; if the dough is too warm, the cookies will spread into flat discs instead of crinkling.
  6. Preheat oven: Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats.
  7. Roll cookies: Scoop dough using a small cookie scoop or tablespoon. Roll each ball between your palms to create a smooth sphere. Immediately roll the balls in the remaining granulated sugar, coating them completely. Place them on the prepared baking sheets about 2 inches apart.
  8. Bake: Bake for 10-12 minutes. The edges should be set and slightly cracked, but the centers will still look soft and puffy. They will firm up as they cool. Do not overbake.
  9. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. This allows the crinkles to set properly.
