- Cream butter and sugar: Using a hand mixer or stand mixer fitted with the paddle attachment, beat the softened butter and 3/4 cup of granulated sugar on medium-high speed for about 3-4 minutes, until the mixture is light, fluffy, and pale in color. This step incorporates air essential for texture.
- Add wet ingredients: Beat in the egg one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract. Scrape down the sides of the bowl with a spatula to ensure even mixing.
- Combine mixtures: Reduce mixer speed to low. Gradually add the dry ingredient mixture to the wet ingredients. Mix just until combined; do not overmix, or the cookies will be tough. The dough should look thick and slightly crumbly but hold together when pressed.
