I found myself staring at a colander of bruised Roma tomatoes last summer, wondering how to use them before they turned to mush. I decided to simmer them with garlic and herbs until they surrendered into a thick, vibrant sauce that felt like a hug in a bowl. It’s now my go-to solution for those evenings when I want something substantial but don’t have the energy for complex prep.

Ingredients
  

Tomatoes
  • 2 lbs Roma tomatoes halved lengthwise (or 1 can [28 oz] whole peeled San Marzano tomatoes)
Aromatics & Seasoning
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tsp kosher salt plus more to taste
  • ½ tsp freshly cracked black pepper
  • 2 sprigs fresh thyme or 1 tsp dried
Finishing Ingredients
  • ¼ cup heavy cream
  • 2 tbsp grated Parmesan cheese plus extra for serving

Method
 

  1. Prep the tomatoes: If using fresh Roma tomatoes, place them cut-side up on a baking sheet. Roast at 400°F (200°C) for 25-30 minutes until soft and slightly caramelized. Let cool enough to handle, then scoop out the flesh and seeds, discarding the skins if you prefer a smoother texture. If using canned tomatoes, drain most of the liquid but reserve it.
  2. Sauté aromatics: In a large saucepan or Dutch oven over medium heat, melt the butter. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to brown it.
  3. Cook down: Add the prepared tomato flesh (or canned tomatoes) to the pan along with the reserved liquid (if using), salt, pepper, and thyme. Bring to a gentle simmer.
  4. Reduce: Let the mixture simmer uncovered for 15-20 minutes, stirring occasionally, until it thickens significantly. The sauce should coat the back of a spoon. If it gets too thick, add a splash more reserved liquid or water.
  5. Finish: Remove from heat. Stir in the heavy cream and Parmesan cheese until fully melted and incorporated. Taste and adjust seasoning with additional salt or pepper if needed. Remove thyme sprigs if used fresh.
  6. Serve: Ladle into shallow bowls and serve immediately with warm crusty bread for dipping.
