I pulled a batch of ginger fizz from the fridge last week to pair with a takeout curry and found myself drinking it straight — the way you do when something finally clicks. I'd been making this for months, usually just throwing together whatever I had, but one particular jar stuck in my head because it came out so bright on its own that I stopped treating it as an afterthought.
What made me keep returning to it was how forgiving the proportions are; you can tweak the ginger-to-citrus ratio and still end up with something lively. A few drops of vanilla extract turned what was already good into something more rounded, so I started keeping a small bottle on hand specifically for this purpose. It's not complicated, but it tastes like you put thought into it.

Ingredients
  

For the ginger syrup
  • 1 cup water
  • 3/4 cup sugar white or raw
  • 2 tbsp fresh ginger root thinly sliced (about 1 ounce of peeled ginger)
  • 1 tsp vanilla extract
For each serving
  • 1/3 cup ginger syrup reserve the rest for later use
  • 1 1/2 cups sparkling water
  • Juice from half a lemon or lime about 1 tbsp lemon juice
  • thinly sliced fresh ginger for garnish
  • ice cubes

Method
 

  1. Make the ginger syrup: Combine the water and sugar in a small saucepan over medium heat. Stir until the sugar dissolves completely, about 2 minutes. Add the sliced ginger, reduce to low, and simmer for 8–10 minutes until fragrant. You'll see the liquid turn a pale gold color — that's your cue it's ready.
  2. Strain and cool: Remove from heat and stir in the vanilla extract. Let the syrup steep at room temperature for about 30 minutes so the ginger flavor fully infuses, then strain through a fine mesh sieve into a jar or bottle. Discard (or save) the cooked ginger slices — they're pretty if you want to use them as garnish later.
  3. Build your drink: Fill a glass with ice cubes. Add 1 tablespoon of fresh lemon or lime juice, followed by 1/3 cup of the prepared ginger syrup. Top with 1 1/2 cups sparkling water and stir gently once to combine. Garnish with a thin slice of raw ginger on the rim if you're feeling fancy.
  4. Adjust to taste: Taste before adding more syrup — some people prefer it sweeter, others want more citrus bite. Add an extra splash of lemon juice if you'd like it brighter, or a touch more ginger syrup for depth. Serve immediately while still fizzy.

Notes

  • The ginger syrup keeps in the refrigerator for up to two weeks — shake or stir before using since sediment can settle at the bottom. If you want a stronger ginger punch, let it steep longer than 30 minutes before straining.
  • Swap lemon juice for lime if you prefer something more tart and tropical, or use both for extra complexity.
  • For an adult version, add a splash of vodka (about 1 oz per drink) just before serving. The vanilla in the syrup pairs beautifully with spirits.
  • Don't skip the ice — this drinks much better when cold because it tempers the sweetness and keeps the fizz lively longer.
