Decorating Cinnamon Rolls as Gifts

No ratings yet
I've been making cinnamon rolls for gifts for years now, but they didn't earn their permanent spot in my rotation until I figured out the wrapping. A neighbor's kid ate one at Christmas and said it tasted better than her grandmother's—so that's what matters.
The trick is freezing them before frosting so you can actually decorate them on gift-giving day without melting everything into a sugary mess. I learned this the hard way when a batch of mine became a sticky puddle in the car trunk. Now I wrap, freeze, and decorate at the last minute.
I like to keep things simple with vanilla bean frosting, but you can swap in cream cheese or even just powdered sugar mixed with milk. The rolls are still good enough to eat warm right out of the oven—just don't frost them until you're ready to give them away.

Ingredients

For the dough:
  • 4 cup all-purpose flour 500g
  • 1/2 cup granulated sugar
  • 2 tsp active dry yeast
  • 3/4 cup whole milk warmed to 110°F
  • 3 large eggs
  • 6 tbsp unsalted butter melted
For the filling:
  • 1/2 cup unsalted butter softened
  • 1 cup brown sugar lightly packed
  • 2 1/2 tsp ground cinnamon
For the frosting:
  • 4 cup powdered sugar
  • 1 tsp vanilla bean paste or extract
  • 6 tbsp whole milk plus more as needed
  • 1 pinch salt

Method

  1. In a large bowl (or stand mixer fitted with dough hook), combine flour and sugar. Sprinkle yeast over the mixture and let sit for 5 minutes until slightly foamy.
  2. Add warm milk, eggs, and melted butter to the flour mixture. Mix on low speed until combined, then increase to medium-high and knead for 6-8 minutes until dough is smooth and elastic. It should pull away from the sides of the bowl. If it sticks too much, add up to 2 more tablespoons of flour.
  3. Place dough in a greased bowl, cover with plastic wrap or a damp towel, and let rise at room temperature for about 1 hour until doubled in size (7-8 hours works fine if you put it in the fridge).
  4. Punch down the dough and roll it out on a floured surface into an 18x26 inch rectangle. Spread softened butter evenly over the entire surface.
  5. Combine brown sugar and cinnamon, then sprinkle uniformly over the buttered dough.
  6. Starting from one long edge, tightly roll up the dough into a log (like a jelly roll). Pinch seam to seal.
  7. Cut into 12 equal pieces using dental floss or a sharp knife. Place each piece in a greased baking dish so they're touching—this helps them rise together and makes for softer rolls.
  8. Let the rolls rest 30 minutes, then bake at 350°F (175°C) for 28-32 minutes until golden brown on top. Internal temperature should reach about 190°F.
  9. If you're giving them as gifts: let cool completely for 15 minutes, then freeze uncovered for 4 hours or overnight. Once frozen solid, wrap tightly in plastic and foil (or place in a gift box). When ready to give, bring rolls to room temperature, then frost just before handing over.
  10. For the frosting: whisk all ingredients together until smooth. Add more milk if too thick—it should be pourable but not runny. If you're decorating ahead of time and want to keep it fresh longer, store frosted rolls in an airtight container at room temperature for up to 3 days.
