I pulled the first batch of these out of my kitchen drawer when I was still experimenting with cookie jars as gifts. The recipe card is folded into thirds now, stained with butter at the crease.
What makes them work is a filling ratio that actually holds up — not too much frosting drowning the cookies, not so little they fall apart. I learned that by eating a dozen in one sitting and watching how quickly the soft centers went stale compared to the edges. The trick is letting the cookies cool completely before spreading; warm cookies melt the butter right into their own surface.
I keep these on hand because they're easy enough for last-minute guests but special enough to pack in lunchboxes or hand out at school events. They hold for three days in an airtight container, which is more than you'd expect from homemade cookies.

Ingredients

For the Cookies
  • 1 cup unsalted butter 2 sticks softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For the Filling
  • 1/2 cup unsalted butter softened
  • 3 1/4 cups confectioners' sugar sifted
  • 1/2 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 pinch salt

Method

  1. Preheat oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter with both sugars until light and fluffy, about 3 minutes. The mixture should look pale yellow and doubled in volume.
  3. Beat in the eggs one at a time, then add vanilla extract. Mix until fully incorporated.
  4. Whisk together flour, baking soda, and salt separately, then gradually fold into the wet ingredients. Mix just until combined — don't overwork the dough.
  5. Using an ice cream scoop or about 1.5 tablespoons per cookie, drop dough onto prepared sheets, spacing 2 inches apart (cookies spread while baking).
  6. Bake for 9-10 minutes, rotating pans halfway through. Cookies should be set but still pale — they'll firm up as they cool. Overbaking makes them crisp instead of soft.
  7. Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack. Cool completely (about 30 minutes) before filling.
  8. For the filling: beat butter until creamy, then add confectioners' sugar gradually. Add milk and vanilla, beating until smooth and spreadable. The frosting should hold its shape but still be soft enough to pipe.
  9. Spread about 2 tablespoons of filling on the flat side of one cookie (not the rounded top), press another cookie gently on top. You'll get a little overflow — that's exactly where it should be.
  10. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months (thaw before serving).
