It’s a no-bake Italian dessert that relies on simple pantry staples but delivers a rich, fudge-like texture that feels surprisingly sophisticated. I keep this in my rotation because it requires zero oven space and comes together while the rest of dinner finishes cooking.

  • 2 cup finely ground chocolate cookie crumbs such as Oreos, filling removed
  • 1/4 cup unsalted butter melted
  • 1/3 cup granulated sugar
  • 1 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream

  • 2 cup all-purpose flour to coat the finished log

Method
 

  1. Prepare the crumbs: If using cookies, process them in a food processor until they resemble fine sand. There should be no large chunks.
  2. Mix wet ingredients: In a medium bowl, whisk together the melted butter and heavy cream until fully combined and smooth. Stir in the vanilla extract.
  3. Combine dry and wet: Add the cookie crumbs, sugar, and cocoa powder to the wet mixture. Stir with a spatula or wooden spoon until the mixture is uniform and holds together when pinched. It should look like moist sand.
  4. Shape the log: Lay out a large sheet of plastic wrap on a flat surface. Dump the mixture onto the center. Use the plastic wrap to help you roll it into a tight cylinder, about 12 inches long and 2-3 inches in diameter. Twist the ends tightly like candy wrappers.
  5. Chill: Place the wrapped log in the refrigerator for at least 4 hours, or overnight, until firm.
  6. Coat: Remove the plastic wrap. Roll the entire surface of the chocolate salami in the flour until evenly coated. This prevents sticking and adds a traditional finish.
  7. Serve: Slice into thin rounds (about 1/2 inch thick) using a sharp knife. Serve immediately or store wrapped in plastic.

Notes
