Method
- Prepare the crumbs: If using cookies, process them in a food processor until they resemble fine sand. There should be no large chunks.
- Mix wet ingredients: In a medium bowl, whisk together the melted butter and heavy cream until fully combined and smooth. Stir in the vanilla extract.
- Combine dry and wet: Add the cookie crumbs, sugar, and cocoa powder to the wet mixture. Stir with a spatula or wooden spoon until the mixture is uniform and holds together when pinched. It should look like moist sand.
- Shape the log: Lay out a large sheet of plastic wrap on a flat surface. Dump the mixture onto the center. Use the plastic wrap to help you roll it into a tight cylinder, about 12 inches long and 2-3 inches in diameter. Twist the ends tightly like candy wrappers.
- Chill: Place the wrapped log in the refrigerator for at least 4 hours, or overnight, until firm.
- Coat: Remove the plastic wrap. Roll the entire surface of the chocolate salami in the flour until evenly coated. This prevents sticking and adds a traditional finish.
- Serve: Slice into thin rounds (about 1/2 inch thick) using a sharp knife. Serve immediately or store wrapped in plastic.

Notes
The secret to getting the texture right is pressing the mixture firmly into the log shape; if you skip that step, it crumbles instead of slicing cleanly. Wrap it tightly in plastic wrap and let it chill until firm so it holds its shape when cut. It’s elegant enough for holidays but simple enough for an impromptu dessert plate.
