The chicken stays moist even if you glance at your email, and the sauce thickens into that sticky, caramelized glaze that clings perfectly to every bite.

Ingredients
  

For the Chicken
  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • Salt and black pepper to taste
For the Barbecue Sauce
  • 0.33 cup ketchup
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 0.25 tsp cayenne pepper adjust for heat preference
For Assembly
  • 4 brioche or potato rolls halved and toasted
  • Coleslaw or pickled red onions for serving

Method
 

  1. Prep the chicken: Pat the chicken dry with paper towels. Season all sides generously with salt, pepper, smoked paprika, garlic powder, and onion powder. Rub with olive oil to ensure even browning.
  2. Make the sauce: In a small bowl, whisk together ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, mustard, and cayenne pepper until smooth. Reserve half of this mixture for serving later; set aside the other half for marinating or brushing.
  3. Cook the chicken: Heat a large skillet over medium-high heat. Add the chicken pieces in a single layer (cook in batches if necessary to avoid crowding). Cook for 5-6 minutes per side without moving them too much, allowing a nice crust to form.
  4. Glaze: Reduce heat to medium-low. Brush the reserved sauce mixture generously over both sides of the chicken during the last 2 minutes of cooking. This prevents burning while building layers of flavor.
  5. Check doneness: Remove from heat when the internal temperature reaches 165°F (74°C) for breasts or 165°F (74°C) for thighs. Do not overcook, as this will dry out the meat. Let rest on a cutting board for 5 minutes before slicing or shredding.
  6. Assemble: Toast your buns lightly. Spread a thin layer of the reserved sauce on the bottom bun. Add the chicken, top with coleslaw or pickled onions for crunch and acidity, and cap with the top bun. Serve immediately.
