Brown Rice and Beans with Ginger Chile Salsa

No ratings yet
I've been making this dish for years, but it wasn't until I started toasting the rice in a dry pan before adding water that everything clicked. The grains came out separate and slightly nutty instead of mushy, which made all the difference when mixed with the beans.
The salsa is what really earns its keep—it comes together faster than you'd think, and having it on hand means even the most tired evening feels intentional. I keep a jar in the fridge for up to five days because once I taste how good it keeps getting as the flavors meld, I never throw any away.
The beans hold up well through reheating too; they actually improve overnight if you have leftovers. That's why this dish has earned its permanent slot in my regular rotation.

Ingredients

For the Brown Rice and Beans
  • 1 cup brown rice rinsed
  • 2 cups low-sodium vegetable broth or water
  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and freshly cracked black pepper
  • 1 15.5 oz can pinto beans, drained and rinsed
  • 1 15 oz can black beans, drained and rinsed
For the Ginger Chile Salsa
  • 2 ripe Roma tomatoes diced
  • ½ English cucumber peeled and diced
  • ¼ cup red onion finely minced
  • 3 tablespoons fresh cilantro chopped
  • 2 teaspoons fresh ginger grated
  • 1 serrano chile seeded (if milder) or unseeded (if hotter), minced
  • Juice of 1 lime about 2 tablespoons lime juice
  • 1 teaspoon sesame oil
  • ½ teaspoon salt

Method

  1. Rinse the brown rice under cold water until the water runs clear. Heat a medium pot over medium-high heat and toast the dry rice for about 3 minutes, stirring frequently, until it smells slightly nutty. This is the step that keeps grains separate.
  2. Add olive oil to the toasted rice along with the diced onion. Cook for 4-5 minutes until softened. Stir in garlic, cumin, smoked paprika, and salt; cook for 30 seconds more until fragrant.
  3. Pour in the vegetable broth or water, bring to a boil, then reduce heat to low, cover tightly, and simmer for 40-45 minutes without lifting the lid. The rice should be tender but still hold its shape when you press it with a fork.
  4. While the rice cooks, make the salsa: combine tomatoes, cucumber, red onion, cilantro, ginger, serrano chile, lime juice, sesame oil, and salt in a medium bowl. Stir well and set aside to let flavors meld for at least 10 minutes while you finish cooking the beans.
  5. When rice is done, fluff with a fork and stir in both cans of beans. Cook together uncovered for 2 more minutes so the beans warm through and absorb some of the rice's flavor. Season generously with salt and pepper to taste.
  6. Serve the brown rice and beans topped with the ginger chile salsa. If you like it hot, add an extra squeeze of lime or a few dashes of your favorite hot sauce.

Notes

  • Substitutions: Swap pinto beans for cannellini or chickpeas if you prefer; use short-grain brown rice for a softer texture. For the chile, jalapeño works well too—just adjust to your heat preference.
  • Storage: Refrigerate leftovers in an airtight container for up to 4 days. Reheat with a splash of water or broth to keep the rice from drying out. The salsa keeps separately for up to 5 days and actually improves after a day.
  • Make-ahead tip: Cook the rice ahead and rehydrate it by steaming in a pot with a little water. The beans and salsa can be prepped even earlier—store them apart so they don't get too watery.
