Broccoli-Cheese Soup

I discovered this soup when a friend brought it to my kitchen counter one evening while I was staring at an empty fridge. It had been in her freezer for three weeks — frozen broccoli and cheese, nothing fancy — and somehow it tasted like she'd spent hours simmering a stock pot.
What makes this recipe stick in my rotation is that it actually delivers on what it promises: rich, velvety soup without the effort of making roux from scratch. The secret I learned after burning one batch was letting the cheese melt slowly over low heat rather than dumping it all at once. You end up with a smooth texture instead of grainy chunks.
I keep a block of sharp cheddar on hand and grate it myself — pre-shredded cheese has anti-caking agents that prevent it from melting properly, which means your soup will have that weird oily sheen even though the ingredients are identical. This is worth the extra minute at the grater.

Ingredients

Butter and Aromatics
  • 2 tbsp unsalted butter
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
Broccoli and Broth
  • 4 cups fresh broccoli florets about 1 lb
  • 4 cups vegetable or chicken broth
Seasoning and Cream
  • 1 cup heavy cream
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper optional
Cheese and Thickener
  • 2 cups sharp cheddar cheese freshly grated
  • 1 tbsp all-purpose flour

Method

  1. Melt butter in a large pot or Dutch oven over medium heat until foamy but not browned. Add diced onion and cook for 5 minutes until softened and translucent.
  2. Stir in garlic and cook for 30 seconds until fragrant, being careful not to let it burn — dark specks will taste bitter.
  3. Add broccoli florets, broth, salt, pepper, and cayenne (if using). Bring to a boil, then reduce heat to medium-low and simmer for 12-15 minutes until broccoli is very tender when pierced with a fork.
  4. Working in batches, transfer half the soup to a blender or use an immersion blender to puree until smooth. Return everything to the pot. (If using a regular blender, let steam escape by removing the center cap and covering the lid with a towel.)
  5. Reduce heat to low. Sprinkle flour over the surface of the soup and stir gently to incorporate — this prevents clumps. Cook for 2 minutes.
  6. Gradually add cheese one handful at a time, stirring continuously until each addition is melted before adding more. This takes patience but ensures no grainy bits remain. Total melt time should be about 4-5 minutes. The soup is done when it coats the back of a spoon and holds its shape briefly when you draw a line through it with your finger — it won't run away immediately.
  7. Taste and adjust seasoning. Add more salt if needed, or a pinch of cayenne for warmth. Serve hot with crusty bread or crackers.
