I first made this martini at a dinner party when I was too nervous to be charming. The host had just pulled out the vodka from a crystal decanter that looked like it belonged in a museum, and I realized I'd been making martinis with my eyes closed for years—stirring without tasting, garnishing by habit rather than intention.
This version earns its place because it balances tradition with practicality. The beets bring earthy sweetness that makes the drink feel special without requiring rare ingredients. A quick pickle in the brine infuses both beet and olive flavors into every sip, so you taste the preparation rather than just the components. It's a cocktail where the effort shows.
The trick most people miss is letting the beets sit long enough to actually color everything—the vodka should turn a dusty rose by the time it's ready to strain. If you're in a hurry, grate your beets instead of dicing them; they release their pigment faster and the texture becomes silky rather than chunky. Use a fine mesh strainer when pouring so no beet bits end up in your glass.

Ingredients
  

Brine
  • 1 cup water for brine
  • 3 tablespoons kosher salt
Main Ingredients
  • 2 cups vodka any decent brand will work
  • 2 medium beets peeled and diced into ½-inch pieces
  • 6 green olives preferably Castelvetrano or Manzanilla
Garnish
  • Fresh thyme sprigs for garnish optional

Method
 

  1. Make the beet brine: Combine water and kosher salt in a small saucepan over medium heat. Stir until salt dissolves completely—about 2 minutes. Remove from heat and let cool to room temperature.
  2. Combine ingredients: Pour the cooled brine into a jar or container large enough to hold all your vodka. Add diced beets and olives, then pour in the vodka. Make sure everything is submerged; if needed, add a splash more water.
  3. Let it rest: Cover and refrigerate for at least 6 hours, ideally overnight (12+ hours). You'll know it's ready when the liquid has turned from clear to a soft dusty rose color—the beets should look almost translucent.
  4. Strain and serve: Using a fine mesh strainer, pour the cocktail into clean bottles or jars for storage. Discard the beets (or save them for snacking—they'll taste like seasoned vodka candy). Serve chilled over ice in your preferred martini glass.
  5. Garnish: Add a fresh olive or thyme sprig if you're feeling fancy, though it's not necessary—the drink is beautiful on its own.
