Method
- Make the beet brine: Combine water and kosher salt in a small saucepan over medium heat. Stir until salt dissolves completely—about 2 minutes. Remove from heat and let cool to room temperature.
- Combine ingredients: Pour the cooled brine into a jar or container large enough to hold all your vodka. Add diced beets and olives, then pour in the vodka. Make sure everything is submerged; if needed, add a splash more water.
- Let it rest: Cover and refrigerate for at least 6 hours, ideally overnight (12+ hours). You'll know it's ready when the liquid has turned from clear to a soft dusty rose color—the beets should look almost translucent.
- Strain and serve: Using a fine mesh strainer, pour the cocktail into clean bottles or jars for storage. Discard the beets (or save them for snacking—they'll taste like seasoned vodka candy). Serve chilled over ice in your preferred martini glass.
- Garnish: Add a fresh olive or thyme sprig if you're feeling fancy, though it's not necessary—the drink is beautiful on its own.
