I learned to make Bananas Foster from my neighbor's husband, who ran a French bistro in the city. He taught me one thing that changed everything: you have to let the butter caramelize before adding the bananas, or you end up with a watery mess instead of the glossy, golden sauce everyone craves.
What keeps it on my regular rotation is how quickly it comes together and how impressive it looks. The whole process takes about 20 minutes from start to finish — the kind of dish that feels special without demanding much effort. Serve it over vanilla ice cream with the warm sauce poured right in, or use it as a topping for French toast or pancakes on lazy mornings.

Ingredients
  

Sauce
  • 2 tbsp unsalted butter
  • 1/3 cup packed light brown sugar about 65g
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • Pinch salt
Bananas
  • 4 ripe but firm bananas peeled and cut diagonally into thirds
Flambé
  • 1/2 cup dark rum

Method
 

  1. To make the sauce: In a large skillet (9 inches or larger works best), melt the butter over medium heat. Sprinkle in the brown sugar and stir constantly until it dissolves and begins to bubble — about 3 minutes. You want small, steady bubbles forming around the edges. Stir in the vanilla extract, cinnamon, and salt.
  2. Add the bananas: Gently drop the banana pieces into the skillet. Cook undisturbed for 1 minute so they start to caramelize on one side, then gently toss them with a spatula to coat evenly. Continue cooking for another 2 minutes until the sauce thickens slightly and turns a deep golden brown.
  3. Flambé (optional but recommended): Remove the skillet from heat. Carefully pour in the dark rum — it will sizzle immediately. Using a long match or kitchen lighter, ignite the alcohol flame. Let it burn off for about 30 seconds, then gently stir to combine everything. If you prefer not to flambé, just let the rum simmer with the bananas for an extra minute to cook off the alcohol.
  4. Serve: Spoon warm Bananas Foster over vanilla ice cream or any other dessert of your choice. The sauce should be glossy and coat each banana piece. Serve immediately while still warm.

Notes

The one tip I keep coming back to is using ripe but firm bananas rather than mushy ones. They hold their shape better when you toss them in the hot butter and don't fall apart into puree. I also always make sure my brown sugar isn't clumpy — if it's been sitting out too long, break it up with a fork first.
