- To make the sauce: In a large skillet (9 inches or larger works best), melt the butter over medium heat. Sprinkle in the brown sugar and stir constantly until it dissolves and begins to bubble — about 3 minutes. You want small, steady bubbles forming around the edges. Stir in the vanilla extract, cinnamon, and salt.
- Add the bananas: Gently drop the banana pieces into the skillet. Cook undisturbed for 1 minute so they start to caramelize on one side, then gently toss them with a spatula to coat evenly. Continue cooking for another 2 minutes until the sauce thickens slightly and turns a deep golden brown.
- Flambé (optional but recommended): Remove the skillet from heat. Carefully pour in the dark rum — it will sizzle immediately. Using a long match or kitchen lighter, ignite the alcohol flame. Let it burn off for about 30 seconds, then gently stir to combine everything. If you prefer not to flambé, just let the rum simmer with the bananas for an extra minute to cook off the alcohol.
- Serve: Spoon warm Bananas Foster over vanilla ice cream or any other dessert of your choice. The sauce should be glossy and coat each banana piece. Serve immediately while still warm.

Notes
The one tip I keep coming back to is using ripe but firm bananas rather than mushy ones. They hold their shape better when you toss them in the hot butter and don't fall apart into puree. I also always make sure my brown sugar isn't clumpy — if it's been sitting out too long, break it up with a fork first.
