The first time I made this, I forgot to salt the pickled carrots. The result was crisp but flat, missing that essential crunch of acidity that ties everything together. Since then, I’ve learned that patience with the pickle brine is non-negotiable for getting those bright, tangy flavors right.
I keep this in my rotation because it requires almost no active cooking time once the veggies are prepped. The key difference between a good version and a great one? Squeezing every drop of liquid out of your shredded vegetables before mixing them with the dressing. It prevents a soggy salad and keeps the textures distinct.
It’s perfect for lunch boxes or as a light dinner side, provided you give the carrots just ten minutes to soften slightly in the vinegar mixture. You don’t need hours; you just need good ingredients and a little bit of time to let the flavors marry.

Ingredients
  

For the Quick Pickle
  • 1 cup rice vinegar
  • 1 cup granulated sugar
  • 1 tsp salt
  • 1 large carrot julienned or grated
  • 1/2 daikon radish julienned or grated (optional but recommended)
For the Salad
  • 4 cups shredded red cabbage
  • 2 cups romaine lettuce chopped into bite-sized pieces
  • 1 cup cilantro leaves and tender stems roughly chopped
  • 1/2 English cucumber sliced into half-moons
  • 1 avocado diced (add just before serving)
For the Vietnamese Peanut Dressing
  • 3 tbsp creamy peanut butter
  • 2 tbsp hoisin sauce
  • 1 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp lime juice fresh squeezed
  • 1 tsp sesame oil
  • 1 clove garlic minced finely
  • 1/2 tsp sriracha or chili paste adjust to heat preference
  • 2-3 tbsp warm water to thin
For Garnish
  • Crushed roasted peanuts
  • Fresh mint leaves
  • Lime wedges

Method
 

  1. Make the Pickle: In a small saucepan, combine rice vinegar, sugar, and salt over medium heat. Stir until dissolved. Remove from heat immediately and pour over the julienned carrot (and daikon if using) in a bowl. Let sit for at least 10 minutes while you prep the rest of the salad.
  2. Prepare Vegetables: Wash and dry your lettuce and cabbage thoroughly; excess water will dilute your dressing. Shred the cabbage finely. If using cucumber, slice it thinly. Place all chopped vegetables (excluding avocado) in a large mixing bowl.
  3. Drain Pickles: Drain the pickled carrots well using a fine-mesh sieve or paper towels. You want them moist but not dripping wet. Add them to the salad bowl along with the cilantro and cucumber.
  4. Whisk Dressing: In a separate small bowl, whisk together peanut butter, hoisin sauce, soy sauce, lime juice, sesame oil, garlic, and sriracha until smooth. Slowly add warm water, one tablespoon at a time, whisking constantly until the dressing reaches a pourable consistency similar to heavy cream.
  5. Combine: Pour about half of the dressing over the salad. Toss gently but thoroughly with tongs to ensure all leaves are coated. Taste and add more dressing if needed. The salad should be glossy but not swimming in liquid.
  6. Serve: Divide among bowls. Top with diced avocado, crushed peanuts, fresh mint, and a squeeze of lime juice just before eating to preserve the brightness.
