I learned the hard way that clams are shy creatures. The first time I made this, I boiled them until they turned into rubber erasers because I was too impatient to watch for the precise moment they opened. Now, I treat the pot like a delicate dance partner: low heat, covered, and watched closely. When the shells pop open just an inch or two, you know it’s time.

  • 1 lb 450g spaghetti or linguine
  • 2 lbs approx. 900g fresh littleneck clams, scrubbed clean and debearded if necessary
  • 1/3 cup extra-virgin olive oil
  • 6 cloves garlic thinly sliced
  • 1/2 teaspoon red pepper flakes adjust to heat preference
  • 1/4 cup dry white wine such as Sauvignon Blanc or Pinot Grigio
  • 1 tablespoon unsalted butter cold and cubed
  • Fresh parsley finely chopped (for garnish)
  • Kosher salt for pasta water and seasoning

Method
 

  1. Prep the clams: Soak scrubbed clams in a bowl of cold salted water for 20 minutes to help them purge any sand. Drain and rinse thoroughly. Discard any clams that are cracked open and do not close when tapped, or those with broken shells.
  2. Start the pasta: Bring a large pot of heavily salted water to a boil. Add the spaghetti and cook according to package directions until it is still very firm (al dente), usually about 2-3 minutes less than the recommended time. Reserve at least 1 cup of the starchy pasta cooking water before draining. Do not rinse the pasta.
  3. Sauté aromatics: While the pasta cooks, heat the olive oil in a very large, heavy-bottomed pan or Dutch oven over medium-low heat. Add the sliced garlic and red pepper flakes. Cook gently for 1-2 minutes until fragrant but not browned. Browned garlic will turn bitter.
  4. Steam the clams: Increase heat to medium-high. Add the white wine to the pan and let it bubble vigorously for 30 seconds to cook off the raw alcohol smell. Carefully add the cleaned clams. Cover the pan immediately with a tight-fitting lid.
  5. Cook until open: Steam the clams for 5-7 minutes, shaking the pan occasionally. Watch closely. The clams are done when the majority have opened wide. Discard any clams that remain tightly closed after this time; they are likely dead and inedible.
  6. Toss with pasta: Transfer the drained al dente spaghetti directly into the pan with the clams. Pour in about 1/2 cup of the reserved starchy pasta water. Toss vigorously with tongs for 1 minute. The sauce should look creamy and emulsified, coating the noodles rather than pooling at the bottom.
  7. Finish and serve: Remove from heat. Stir in the cold cubes of butter until melted and incorporated. This adds a rich gloss to the sauce. Taste the liquid; add salt only if needed (the clams will release salty juices). Garnish with fresh parsley and serve immediately, ensuring each bowl has both pasta and several clams.
