- Sauté aromatics: In a large saucepan or Dutch oven over medium heat, melt the butter. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to brown it.
- Cook down: Add the prepared tomato flesh (or canned tomatoes) to the pan along with the reserved liquid (if using), salt, pepper, and thyme. Bring to a gentle simmer.
- Reduce: Let the mixture simmer uncovered for 15-20 minutes, stirring occasionally, until it thickens significantly. The sauce should coat the back of a spoon. If it gets too thick, add a splash more reserved liquid or water.
- Finish: Remove from heat. Stir in the heavy cream and Parmesan cheese until fully melted and incorporated. Taste and adjust seasoning with additional salt or pepper if needed. Remove thyme sprigs if used fresh.
- Serve: Ladle into shallow bowls and serve immediately with warm crusty bread for dipping.
