I discovered this spread while trying to salvage a bag of toasted coconut chips that had gone slightly stale. Instead of tossing them, I pulsed them in the food processor with almond butter and a touch of maple syrup until they formed a thick, grainy paste.   2. Process the base: Transfer the cooled toasted coconut to a food processor or high-speed blender. Pulse several times until the coconut breaks down into fine crumbs. Visual cue: You are looking for a sandy texture, not a fine powder like flour.
  3. Add wet ingredients: Add the almond butter (or peanut butter), maple syrup, vanilla extract, and salt to the food processor. Process until the mixture begins to clump together and pull away from the sides of the bowl. Visual cue: The mixture should look like damp sand that holds its shape when squeezed.
  4. Adjust consistency: If the mixture is too dry or crumbly to spread, add warm water one teaspoon at a time while the processor is running. Stop adding water once the mixture forms a thick, paste-like consistency similar to natural peanut butter. Note: You likely won’t need more than 1–2 tablespoons of water.
