Now, it’s the secret weapon that turns a boring Tuesday dinner into something crisp and sophisticated without actually cooking anything.

Ingredients
  

For the Salad
  • 2 medium zucchini ends trimmed
  • 3 large carrots peeled
  • 1 English cucumber halved lengthwise
  • 1 cup raw walnuts roughly chopped
  • 1/4 cup fresh parsley finely chopped
For the Lemon-Herb Vinaigrette
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice about half a lemon
  • 1 tsp Dijon mustard
  • 1 small garlic clove minced or grated
  • 1/2 tsp honey
  • Salt and freshly cracked black pepper to taste

Method
 

  1. Toast the walnuts: Heat a small dry skillet over medium-low heat. Add the chopped walnuts and toast, stirring frequently, for 3–4 minutes until fragrant and lightly golden. Watch closely as they burn quickly. Transfer to a plate to cool completely.
  2. Shave the vegetables: Using a mandoline or a very sharp chef’s knife, shave the zucchini, carrots, and cucumber into long, thin ribbons. If using a peeler, aim for wide strips; if using a mandoline, ensure your guard is secure. Place all shaved vegetables in a large mixing bowl.
  3. Make the dressing: In a small jar or bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, honey, salt, and pepper until emulsified and smooth.
  4. Dress and rest: Pour half of the dressing over the vegetables and toss gently to coat. Let the salad sit for 10 minutes to allow the flavors to meld and the carrots to soften slightly. Toss again, adding more dressing if needed (you may not need all of it).
  5. Finish and serve: Stir in the cooled toasted walnuts and fresh parsley. Taste and adjust seasoning with an extra pinch of salt or squeeze of lemon if desired. Serve immediately for maximum crunch.
