  • 3/4 cup mayonnaise full fat recommended
  • 1/4 cup sour cream
  • 2 tbsp yellow mustard
  • 1 tbsp white vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Cook the pasta: Bring a large pot of generously salted water to a boil. Add the elbow macaroni and cook according to package directions for al dente. It should still have a slight bite, as it will soften further in the dressing.
  2. Shock and dry: Drain the pasta immediately and rinse under cold running water until completely cool. This stops the cooking process. Spread the pasta on a large baking sheet or clean kitchen towel and pat it dry with paper towels. Crucial Step: Ensure the pasta is as dry as possible to prevent a watery salad later.
  3. Prepare the aromatics: While the pasta cools, combine the diced red onion, celery, bell pepper, and chopped pickles in a large mixing bowl. Let them sit for 5 minutes to allow the flavors to meld slightly.
  4. Whisk the dressing: In a separate small bowl or jar, whisk together the mayonnaise, sour cream, yellow mustard, white vinegar, sugar, salt, and black pepper until smooth and creamy.
  5. Combine: Add the cooled, dried pasta to the bowl with the vegetables. Pour the dressing over everything. Use tongs or a large spoon to gently fold everything together until evenly coated. Be careful not to mash the pasta.
  6. Chill: Cover tightly with plastic wrap and refrigerate for at least 2 hours before serving. This resting time allows the flavors to fully integrate and the pasta to absorb some of the dressing's moisture.
