The first time I made this, I toasted the bread in the oven instead of a skillet. The result was unevenly browned crusts that couldn't hold up against the heavy toppings, so I switched to a hot cast iron for every batch since.

Ingredients
  

For the Bacon
  • 12 slices thick-cut bacon cut in half crosswise (to fit standard bread)
For Assembly
  • 4 slices thick-sliced sourdough or Texas toast bread
  • 8 leaves romaine lettuce rinsed and thoroughly dried
  • 2 medium ripe tomatoes sliced into 1/4-inch rounds
  • Salt and freshly cracked black pepper to taste
For the Sauce
  • 1/3 cup mayonnaise full fat recommended for texture
  • 1 tablespoon ketchup
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper optional, for heat

Method
 

  1. Prepare the sauce: In a small bowl, whisk together the mayonnaise, ketchup, mustard, garlic powder, smoked paprika, and cayenne pepper until smooth. Set aside. This can be made ahead of time if you prefer.
  2. Cook the bacon: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup. Arrange the bacon halves in a single layer, ensuring they do not overlap. Bake for 15-20 minutes, rotating the pan halfway through, until the bacon is crisp but still pliable enough to handle. It should reach an internal temperature of at least 145°F (63°C).
  3. Drain and rest: Transfer the cooked bacon to a wire rack set over a paper towel-lined plate. Let it cool for about 2-3 minutes. This resting period allows the fat to reabsorb slightly, making it less greasy and easier to layer without sliding off the sandwich.
  4. Toast the bread: While the bacon rests, toast your bread slices in a skillet over medium heat with a light brush of oil or butter until golden brown on both sides. Alternatively, you can toast them in the oven for the last 2 minutes of the bacon cooking time if they fit easily. Aim for a sturdy crunch that won't get soggy immediately upon contact with wet ingredients.
  5. Season the tomatoes: Place the tomato slices on a plate and lightly season both sides with salt and pepper. This draws out excess moisture, which helps keep the sandwich structural integrity intact.
  6. Assemble: Spread a generous layer of the sauce on one side of each slice of toasted bread. Layer the romaine lettuce leaves onto the bottom slice, followed by the seasoned tomato slices, then top with the crispy bacon pieces. Close the sandwich and press down gently to adhere.
  7. Serve immediately: Slice in half diagonally for easier handling. Serve right away while the bread is warm and the bacon retains its snap.
