I discovered this soup’s true potential when I accidentally left the roasted pumpkin seeds in too long. They turned dark and bitter, infusing the broth with a deep, nutty spice that balanced the sweetness perfectly. That happy accident became my standard method.
Roasting the vegetables first concentrates their flavor and cuts down on cooking time significantly. It also eliminates the need for heavy cream while keeping the texture luxuriously smooth. This technique ensures every spoonful is rich without being heavy.

Ingredients
  

For the Roasted Vegetables
  • 2 lbs sugar pumpkin or butternut squash peeled, seeded, and cut into 1-inch cubes
  • 1 medium yellow onion chopped roughly
  • 3 cloves garlic smashed (peels on)
  • 1 tbsp olive oil
  • 0.5 tsp salt
For the Soup Base
  • 1 tbsp butter or coconut oil
  • 1 small yellow onion finely diced
  • 2 carrots peeled and diced small
  • 1 jalapeño pepper seeds removed and minced (adjust for heat preference)
  • 1 tsp fresh ginger grated
  • 2 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 4 cups vegetable broth
  • 1 cup full-fat coconut milk
  • 0.5 lime juiced
  • fresh cilantro chopped for garnish

Method
 

  1. Roast the vegetables: Preheat your oven to 400°F (200°C). Toss the pumpkin cubes with olive oil and salt on a large baking sheet. Arrange them in a single layer so they roast rather than steam. Roast for 25-30 minutes until tender when pierced with a fork. Remove from heat and let cool slightly.
  2. Sauté the aromatics: While the pumpkin roasts, melt butter in a large pot over medium heat. Add the finely diced onion and carrots. Cook for 5-7 minutes until softened and translucent. Add the minced jalapeño, ginger, smoked paprika, and cumin. Stir constantly for 1 minute until fragrant.
  3. Combine and simmer: Carefully add the roasted pumpkin (and any juices from the pan) to the pot along with the vegetable broth. Bring to a boil, then reduce heat to low. Cover and simmer for 10 minutes to allow flavors to meld. Remove the smashed garlic cloves if you prefer a completely smooth texture, or leave them in for extra flavor if you plan to blend thoroughly.
  4. Blend until smooth: Use an immersion blender directly in the pot to puree the soup until completely smooth. Alternatively, carefully transfer batches to a standing blender and blend on high until silky smooth. Return any blended portions to the pot.
  5. Finish and season: Stir in the coconut milk and lime juice. Taste the soup. Add more salt or a pinch of cayenne if you want extra heat. Heat through gently for another 2-3 minutes, but do not let it boil vigorously after adding the coconut milk to prevent curdling.
  6. Serve: Ladle into bowls and garnish with fresh cilantro and a drizzle of chili oil if desired. Serve immediately.

Notes
