- Roast the vegetables: Preheat your oven to 400°F (200°C). Toss the pumpkin cubes with olive oil and salt on a large baking sheet. Arrange them in a single layer so they roast rather than steam. Roast for 25-30 minutes until tender when pierced with a fork. Remove from heat and let cool slightly.
- Sauté the aromatics: While the pumpkin roasts, melt butter in a large pot over medium heat. Add the finely diced onion and carrots. Cook for 5-7 minutes until softened and translucent. Add the minced jalapeño, ginger, smoked paprika, and cumin. Stir constantly for 1 minute until fragrant.
- Combine and simmer: Carefully add the roasted pumpkin (and any juices from the pan) to the pot along with the vegetable broth. Bring to a boil, then reduce heat to low. Cover and simmer for 10 minutes to allow flavors to meld. Remove the smashed garlic cloves if you prefer a completely smooth texture, or leave them in for extra flavor if you plan to blend thoroughly.
- Blend until smooth: Use an immersion blender directly in the pot to puree the soup until completely smooth. Alternatively, carefully transfer batches to a standing blender and blend on high until silky smooth. Return any blended portions to the pot.
- Finish and season: Stir in the coconut milk and lime juice. Taste the soup. Add more salt or a pinch of cayenne if you want extra heat. Heat through gently for another 2-3 minutes, but do not let it boil vigorously after adding the coconut milk to prevent curdling.
- Serve: Ladle into bowls and garnish with fresh cilantro and a drizzle of chili oil if desired. Serve immediately.

I always keep a jar of smoked paprika nearby because it adds a subtle depth that plain salt can’t achieve. Stirring it in at the very end preserves its aroma and gives the soup a warm, inviting finish that feels like a hug on a cool evening.
