I finally stopped slicing the potatoes paper-thin after a batch turned out mushy last month. Now I use a mandoline set to 1/8-inch, which ensures every slice cooks evenly without turning into glue. The result is tender but distinct layers that hold their shape when you cut a wedge.
Smoked ham adds a salty depth that rivals bacon, but without the grease pooling in the pan. I let it bake covered for most of the time to steam through, then uncover it at the end so the top gets golden and crisp. It’s rich enough for guests but simple enough for a Tuesday.
One trick: rinse your sliced potatoes in cold water before layering. This washes off excess starch that makes the sauce cloudy and gummy. You won’t see the difference until you taste it, but once you do, you’ll never skip this step again.

The Potatoes & Ham
  • 3 lbs Yukon Gold potatoes about 6-8 medium, peeled and sliced into 1/8-inch rounds
  • 1 lb smoked ham cut into 1/2-inch cubes or thin strips
  • 1 large yellow onion thinly sliced
The Cream Sauce
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 1 ½ cups whole milk
  • 1 cup heavy cream
  • 1 tsp kosher salt plus more to taste
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp dried thyme
  • 1/4 tsp nutmeg freshly grated if possible
  • 1 cup sharp cheddar cheese shredded
Optional Topping
  • 2 tbsp panko breadcrumbs mixed with 1 tsp melted butter for extra crunch

Method
 

  1. Prep the potatoes: Place the sliced potatoes in a large bowl of cold water and let them sit for 10 minutes to remove excess starch. Drain thoroughly and pat dry with a clean kitchen towel or paper towels. This is crucial for preventing a gloopy sauce.
  2. Make the roux: Preheat your oven to 375°F (190°C). In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1-2 minutes until golden and bubbly. Do not let it brown.
  3. Create the base: Slowly whisk in the milk and heavy cream, ensuring no lumps remain. Add the thyme, nutmeg, salt, and pepper. Cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 3-5 minutes). Remove from heat.
  4. Assemble half: In a greased 9x13-inch baking dish, arrange one-third of the potato slices in an overlapping layer. Sprinkle with one-third of the ham and onion. Pour one-third of the sauce over this layer. Repeat two more times, ending with a final layer of potatoes.
  5. Top with cheese: Sprinkle the shredded cheddar evenly over the top layer of potatoes. If using breadcrumbs, sprinkle them over the cheese now for added texture.
  6. Bake covered: Cover tightly with aluminum foil. Bake for 45 minutes. The foil traps steam, ensuring the potatoes become tender all the way through. Check doneness by inserting a knife into the center; it should meet little resistance.
  7. Bake uncovered: Remove the foil and bake for an additional 15-20 minutes until the top is golden brown and bubbling. If you want more browning, switch to broil for the last 3 minutes, watching closely so the cheese doesn't burn.
  8. Rest before serving: Let the dish rest for at least 10 minutes after removing it from the oven. This allows the sauce to set slightly, making it easier to cut clean portions without everything sliding apart.
