I finally stopped trying to mimic bakery-style whoopie pies after a batch turned out too cakey and dry. Oatmeal is the secret weapon here; it absorbs moisture differently than flour alone, creating a tender, chewy center that holds up beautifully against the sweet filling.

Ingredients
  

For the Oatmeal Cookies
  • 1 cup unsalted butter softened to room temperature
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 cup old-fashioned rolled oats not instant
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon
For the Cream Cheese Filling
  • 4 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 2 cups powdered sugar sifted
  • 1 tsp vanilla extract
  • Pinch salt

Method
 

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, beat the softened butter and brown sugar together on medium-high speed until light and fluffy, about 2-3 minutes. This incorporates air, which helps keep the cookies tender.
  3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract. Scrape down the sides of the bowl with a spatula to ensure even mixing.
  4. In a separate medium bowl, whisk together the flour, oats, baking soda, baking powder, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients on low speed. Mix just until combined; do not overmix, or the cookies will become tough. The batter will be thick and sticky.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart as they will spread.
  7. Bake for 10-12 minutes. The cookies are done when the edges are set and lightly golden, but the centers still look soft. They will firm up as they cool.
  8. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. This step is crucial; assembling warm cookies will melt the filling.
  9. While the cookies cool, make the filling: In a clean bowl, beat the softened cream cheese and butter together until smooth and creamy.
  10. Add the sifted powdered sugar, vanilla, and salt. Beat on low speed initially to avoid creating a sugar cloud, then increase to medium-high until the mixture is fluffy and spreadable. If it’s too stiff, add 1 teaspoon of milk. If too runny, add more powdered sugar.
  11. Once the cookies are completely cool, pipe or spoon a generous amount of filling onto the flat side of one cookie. Sandwich with another cookie, flat side down. Repeat until all cookies are filled.
