Red Velvet Cookie(s) Pops

I finally cracked the code on red velvet cookies after my first batch turned out too cakey. The secret isn't just the cream cheese frosting, but chilling the dough overnight to control spread and deepen that tangy flavor profile.

Ingredients

For the Red Velvet Cookies:
  • 2 cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tbsp unsweetened cocoa powder natural
  • ¾ cup unsalted butter softened to room temperature
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 2 tbsp red food coloring gel for vibrant color
  • 1 tbsp white vinegar
For the Cream Cheese Frosting:
  • 4 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 1½ cup powdered sugar sifted
  • ½ tsp vanilla extract
  • 1 pinch salt
Assembly:
  • 20 –25 lollipop sticks standard size

Method

  1. Whisk dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder until well combined. Set aside.
  2. Cream butter and sugars: In a large bowl using an electric mixer, beat the softened butter, granulated sugar, and brown sugar on medium-high speed for about 3–4 minutes until light and fluffy. Scrape down the sides of the bowl with a spatula.
  3. Add wet ingredients: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract, red food coloring gel, and white vinegar. The batter should be a vibrant red color.
  4. Combine mixtures: Gradually add the dry ingredient mixture to the wet mixture on low speed, mixing just until no flour streaks remain. Do not overmix.
  5. Chill dough (Crucial Step): Cover the bowl and refrigerate the dough for at least 1 hour, or up to 24 hours. Chilling prevents excessive spreading and helps the cookies hold their shape on sticks.
  6. Preheat oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  7. Form cookies: Scoop dough into 1.5-tablespoon balls (a cookie scoop works best for uniformity). Place them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake: Bake for 9–11 minutes. The edges should be set but the centers still look slightly soft. They will firm up as they cool. Do not overbake, or they will lose their chewy texture.
  9. Insert sticks immediately: As soon as you remove the baking sheet from the oven, gently insert a lollipop stick into the center of each warm cookie. Hold it for about 10 seconds to secure it before moving them. Let them cool completely on the pan for 5 minutes, then transfer to a wire rack to cool fully.
  10. Make frosting: While cookies cool, beat the softened cream cheese and butter together until smooth. Gradually add powdered sugar, vanilla, and salt, beating on low speed until combined, then increase to high speed for 2 minutes until fluffy.
  11. Frost: Once cookies are completely cool, pipe or spread a generous amount of frosting over half of each cookie. You can create swirls with the back of a spoon for a rustic look.
  12. Set: Let the frosting set for at least 30 minutes before packaging or serving to prevent smudging.

Notes

These pops are now a staple in my rotation because they hold their shape beautifully on lollipop sticks without collapsing. I always dip half of each cookie for a clean presentation; it looks professional but requires zero piping skills.
The contrast between the crisp edge and soft center is what keeps me coming back to this recipe, making them easy to pack or gift without worrying about messy crumbs.
