- Whisk dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder until well combined. Set aside.
- Cream butter and sugars: In a large bowl using an electric mixer, beat the softened butter, granulated sugar, and brown sugar on medium-high speed for about 3–4 minutes until light and fluffy. Scrape down the sides of the bowl with a spatula.
- Add wet ingredients: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract, red food coloring gel, and white vinegar. The batter should be a vibrant red color.
- Combine mixtures: Gradually add the dry ingredient mixture to the wet mixture on low speed, mixing just until no flour streaks remain. Do not overmix.
- Chill dough (Crucial Step): Cover the bowl and refrigerate the dough for at least 1 hour, or up to 24 hours. Chilling prevents excessive spreading and helps the cookies hold their shape on sticks.
- Preheat oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Form cookies: Scoop dough into 1.5-tablespoon balls (a cookie scoop works best for uniformity). Place them on the prepared baking sheets, spacing them about 2 inches apart.
- Bake: Bake for 9–11 minutes. The edges should be set but the centers still look slightly soft. They will firm up as they cool. Do not overbake, or they will lose their chewy texture.
- Insert sticks immediately: As soon as you remove the baking sheet from the oven, gently insert a lollipop stick into the center of each warm cookie. Hold it for about 10 seconds to secure it before moving them. Let them cool completely on the pan for 5 minutes, then transfer to a wire rack to cool fully.
- Make frosting: While cookies cool, beat the softened cream cheese and butter together until smooth. Gradually add powdered sugar, vanilla, and salt, beating on low speed until combined, then increase to high speed for 2 minutes until fluffy.
- Frost: Once cookies are completely cool, pipe or spread a generous amount of frosting over half of each cookie. You can create swirls with the back of a spoon for a rustic look.
- Set: Let the frosting set for at least 30 minutes before packaging or serving to prevent smudging.
