Method
- Heat a small non-stick skillet over medium-low heat. Add the butter or oil and swirl to coat the bottom. Wait until the butter foams slightly but does not brown.
- Crack the eggs gently into the pan, trying to keep the yolks intact. If using butter, listen for a gentle sizzle; if it’s screaming, your heat is too high.
- Let the eggs cook undisturbed for about 1–2 minutes. Watch closely as the whites transition from clear to opaque white around the edges while staying translucent near the yolk.
- Once the whites are mostly set but still slightly jiggly in the center, add 1 teaspoon of water to the pan and immediately cover with a lid. This steam finishes cooking the top of the whites without flipping.
- Cook for another 30–60 seconds until the whites are fully set and the yolk is still runny but warm. Remove from heat.
- Slide onto a plate, season generously with salt and pepper, and serve immediately.

Notes
I serve these whenever I want breakfast to feel special but take less than five minutes from stove to plate. They pair beautifully with crispy bacon or just a slice of sourdough for dipping. The key is patience: keep the flame low and watch the edges turn opaque rather than brown. Once you get that gentle steam method down, you’ll never go back to scrambling again.
