Oxtail Soup with Onions and Barley

No ratings yet
I learned this recipe from my grandmother's handwritten card, the one stained with garlic oil and tucked into a drawer I didn't know existed. What hooked me wasn't anything dramatic — it was that oxtail soup keeps getting better for days, like it's trying to tell you something about patience. I make it when I want dinner without thinking about what day it is or whether I'll have leftovers for lunch the next afternoon.

Ingredients

For the soup:
  • 2 lbs oxtails cut into 1-inch pieces
  • 3 tbsp olive oil or vegetable oil
  • 2 large yellow onions diced (about 4 cups)
  • 3 cloves garlic minced
  • 1/2 cup dry red wine
  • 4 cups beef broth low sodium preferred
  • 1 cup pearl barley rinsed well
  • 4 sprigs fresh thyme or 2 tsp dried
  • 2 bay leaves
  • 1 tbsp tomato paste
  • Salt and freshly ground black pepper
For finishing:
  • Fresh parsley chopped (for garnish)
  • Lemon wedges

Method

  1. Pat oxtail pieces dry with paper towels — this helps them brown better. Season generously with salt and pepper. Heat oil in a large Dutch oven over medium-high heat until shimmering.
  2. Sear oxtails in batches, 3-4 minutes per side, until deeply browned and crusty. Don't crowd the pan; you want color, not steam. Transfer to a plate when done. (Internal temperature: 165°F for food safety.)
  3. Reduce heat to medium. Add diced onions to the same pot with a pinch of salt. Cook 8-10 minutes until softened and translucent, stirring occasionally. Add garlic and tomato paste; cook 1 minute more until fragrant.
  4. Pour in red wine, scraping up browned bits from the bottom of the pot. Let it bubble for 2 minutes to reduce slightly.
  5. Return oxtails to the pot along with beef broth, barley, thyme sprigs, and bay leaves. Bring to a boil, then reduce heat to low. Cover partially and simmer gently for 1.5 to 2 hours until oxtail is fork-tender and falling off the bone.
  6. If using dried thyme instead of fresh, add it at this stage. Taste and adjust seasoning — you'll likely need more salt than expected since barley absorbs a lot.
  7. Remove thyme sprigs and bay leaves before serving. Ladle into bowls with plenty of oxtail pieces and broth. Garnish with chopped parsley and serve with lemon wedges on the side.

Notes

The barley gives this body without making it heavy, and a slow simmer turns oxtail into something that falls apart with just a fork's help. I add onions early so they melt right in — no need to worry about finding them later. A splash of red wine at the start deepens everything, and if you have time for an hour or two longer, do it. The soup will thank you.
The trick that made this permanent: brown your oxtail pieces well before adding liquid. I used to rush past this step, but searing them until they've got a real crust — not just color, actual browning — makes the whole pot taste richer without any extra work. Don't skip it.
