Popcorn Mix
  • 12 cup popped popcorn plain, air-popped
  • 1 cup mini marshmallows
  • 0.5 cup roasted pecans or walnuts roughly chopped
  • 0.5 cup chocolate chips semi-sweet or milk
  • 0.25 cup candy corn optional, for Halloween theme
For the Coating:
  • 3 tbsp unsalted butter
  • 2 tbsp light brown sugar
  • 1 tsp vanilla extract
  • 0.25 tsp ground cinnamon
  • 1 pinch salt

Method
 

  1. Prepare the Popcorn: Remove any unpopped kernels or large pieces of hull from your popped popcorn. Place the clean popcorn in a very large mixing bowl (at least 8-quart capacity) to allow room for tossing.
  2. Melt the Coating Base: In a small microwave-safe bowl, combine the butter, brown sugar, cinnamon, and salt. Microwave on high for 30 seconds. Stir well, then microwave for another 15-20 seconds until fully melted and smooth. Whisk in the vanilla extract. Visual cue: The mixture should be glossy and liquid, not separated or burnt.
  3. Coat the Popcorn: Pour the warm butter-sugar mixture over the popcorn. Use two large spatulas to gently fold and toss the popcorn until every piece is lightly coated. Be gentle to avoid crushing the kernels. Tip: Work quickly before the sugar hardens.
  4. Add Mix-ins: Immediately add the mini marshmallows, chopped nuts, chocolate chips, and candy corn to the bowl. Continue tossing gently to distribute them evenly throughout the popcorn.
  5. Set and Serve: Transfer the mix to a baking sheet lined with parchment paper or wax paper in a single layer if you want it to set faster, or leave it in the bowl for serving. Let cool for 10-15 minutes until the coating firms up slightly but remains chewy. Store in an airtight container at room temperature.
