I made these multigrain and honey bars specifically for those busy weeknights when you need something that tastes like a treat but doesn't require you to turn on every single appliance in your house. The secret here is using a simple sticky binder (honey and brown sugar) mixed with oats, nuts, and seeds, which creates the perfect chewy texture without needing any fancy mix-ins or baking powder.
I like to keep my recipes practical for real life, so these bars are designed to be thrown together in about 15 minutes of prep time. My biggest tip for you is to let them cool completely before cutting; if you try to slice them while they are still warm and gooey, they will just tear into sticky messes instead of clean squares. Trust me, patience at this stage saves a lot of frustration! Once they hit the fridge and set up, these bars become your go-to grab-and-go fuel.

Ingredients
  

The Dry Mix
  • 2 cups old-fashioned rolled oats
  • 1/2 cup unsalted almonds roughly chopped
  • 1/4 cup pumpkin seeds pepitas
  • 1/4 cup sunflower seeds
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt
The Wet Binder
  • 1/2 cup honey
  • 1/3 cup packed light brown sugar
  • 1 large egg beaten
  • 1/4 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 1/2 cup raisins or dried cranberries optional

Method
 

  1. Prep your pan: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving a little overhang on the sides so you can lift the bar out easily once it's done. Lightly grease the parchment or spray it with non-stick cooking spray.
  2. Mix the dry ingredients: In a large mixing bowl, combine the rolled oats, chopped almonds, pumpkin seeds, sunflower seeds, cinnamon, and sea salt. Give it a good whisk to make sure the spices are evenly distributed throughout the oats.
  3. Combine the wet ingredients: In a separate medium bowl, whisk together the honey, brown sugar, beaten egg, melted butter, and vanilla extract until the mixture is smooth and glossy. If you want to add raisins or cranberries, fold them into this wet mixture now.
  4. Bring it together: Pour the wet mixture over the dry ingredients. Use a rubber spatula or your hands to gently mix everything until the oats are evenly coated and the mixture looks slightly sticky but holds its shape when pressed together. It should look like thick dough, not a crumbly mess.
  5. Press into the pan: Transfer the mixture into your prepared 8x8 inch pan. Use the bottom of a measuring cup or a flat utensil to press the mixture down firmly and evenly. You want this layer to be quite compact; if you don't press it tight enough, the bars will crumble when you try to cut them later.
  6. Bake: Place the pan in the center of the oven and bake for 20 to 25 minutes. Look for the edges to turn a light golden brown; they don't need to be dark or fully set like cookie bars, just slightly toasted around the edges.
  7. Cool completely: This is the most important step! Remove the pan from the oven and let it cool on a wire rack. Once it reaches room temperature, transfer the entire block of granola to the fridge for at least 2 hours (or overnight) to set properly before cutting.
  8. Cut and store: After chilling, lift the bars out using your parchment overhang. Slice into 9 equal squares. Store in an airtight container at room temperature for up to 1 week.

Notes
