Fruity Rice Krispies Kebabs

When I first made these, the marshmallows kept sliding right off the skewers—tiny white balls rolling back into my hair. After a few tries, I learned to toast them lightly before threading so they grip better. The trick that actually matters though is keeping your fruit pieces about half an inch thick; anything smaller and you're playing Jenga with every bite.

Ingredients

For the skewers (makes about 12 kebabs)
  • 36 mini marshmallows
  • 1 cup fresh strawberries hulled and cut into thirds
  • 1 cup pineapple chunks fresh or canned, drained
  • 1 cup seedless grapes halved if large
  • ½ cup mandarin orange segments drained well
For the drizzle
  • ¼ cup white chocolate chips
  • 2 teaspoons coconut oil
  • 1 pinch vanilla extract

Method

  1. Prepare your fruit. Cut strawberries into thirds, halve any large grapes, and drain the canned pineapple or mandarin oranges thoroughly—this step matters more than most people realize because wet fruit makes everything slide off.
  2. Thread your skewers. Starting with a marshmallow on one end, alternate between fruit pieces and marshmallows until you reach the other end of the skewer. This gives you that satisfying pattern where every other piece is something sweet from the bag.
  3. Toast lightly (optional but worth it). If your marshmallows are especially soft or sticky, give them a quick 20-second pass in the microwave before threading—they'll hold their shape much better and stay put during eating.
  4. Make the drizzle. Melt white chocolate chips with coconut oil in 30-second intervals at medium power, stirring between each interval until smooth and pourable. Stir in vanilla extract once melted.
  5. Drizzle and serve. Arrange kebabs on a platter or individual plates and drizzle the warm white chocolate over them in a zigzag pattern. Serve immediately for best visual effect—the chocolate sets quickly as it cools.

Notes

I've kept these in my regular rotation for years now because they come together quickly and look impressive enough to set out on a platter without any fuss. I usually make them when friends are over or just as a fun snack to keep around the house. The colors stay bright if you serve them within an hour or so, which is usually fine since we eat them pretty fast.
The real secret is using skewers that aren't too thin—wooden ones work best because they hold the fruit without splitting and don't get slippery when you're juggling a plate full of them. I've tried metal ones before and the marshmallows always seem to find their way off, so stick with wooden if you can.
