Sautéed potatoes with lemon and rosemary

I've been making sautéed potatoes with lemon and rosemary for years now, ever since I learned the trick of not crowding the pan. When I started cooking this more often, I kept running into mushy potatoes from piling them too deep — once I switched to a wide skillet and gave each piece room to brown properly, everything changed.
This has earned its permanent spot in my regular rotation because it's genuinely effortless yet looks like you cared about dinner. The bright lemon cuts through the richness of butter and oil beautifully, and rosemary adds something herbal that makes even simple potatoes feel special enough for guests but easy enough for weeknights. I usually serve them alongside roast chicken or as a side to grilled fish, though honestly they're good on their own with just a sprinkle of flaky salt.
The one thing that really matters is using the right potato — Yukon Golds are my go-to because they hold their shape but get creamy inside. I also swear by finishing them off-heat with fresh lemon zest so you don't lose all the aroma to cooking.

Ingredients

Potatoes
  • 2 lbs Yukon Gold potatoes cut into 1-inch cubes (about 4 medium)
Fats
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
Aromatics
  • 4 large sprigs rosemary leaves stripped and roughly chopped
  • 2 cloves garlic minced
Lemon
  • 1 lemon juiced (about 3 tbsp)
  • Zest of 1 lemon finely grated
Seasoning
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Method

  1. Bring a large pot of generously salted water to a boil. Add the cubed potatoes and cook for 8-10 minutes until they're just fork-tender but still hold their shape — not mushy at all. Drain well and let them sit in the colander for a minute so excess steam escapes.
  2. While the potatoes are cooking, heat the olive oil and butter together in a large skillet (at least 12 inches wide) over medium-high heat until the butter foams but doesn't brown.
  3. Add the drained potatoes to the skillet in an even layer — don't crowd them! If your pan can't fit all the potatoes at once, work in batches. You want each piece touching the hot surface for browning.
  4. Cook undisturbed for 2-3 minutes until you see golden-brown edges on the bottom. Gently toss or flip with a spatula and cook another 2-3 minutes until browned on all sides. The potatoes should be crispy outside but tender inside.
  5. Sprinkle in the chopped rosemary and minced garlic, stirring constantly for about 30 seconds — you'll know it's ready when the garlic smells fragrant but not burnt (about 1 minute).
  6. Remove the skillet from heat immediately and add the lemon juice and zest. Toss well to distribute evenly — the potatoes will absorb some of the liquid as they rest. Season with salt and pepper to taste, starting with about 1/2 tsp kosher salt.
  7. Let the potatoes sit in the pan for 1-2 minutes before serving so the flavors meld together. Taste one and adjust seasoning if needed. Serve warm.
