Chickpeas with Leeks, Spinach, and Smoked Paprika

I first made this dish because I needed a way to use up three sad leeks and a bag of spinach screaming for attention. The result was so deeply savory that it instantly earned a permanent slot in my rotation, primarily due to the smoked paprika’s ability to mimic the depth of slow-cooked beans without the effort.

  • 2 tbsp olive oil
  • 3 large leeks white and light green parts only, thinly sliced and washed thoroughly
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp red pepper flakes optional
  • 2 cans chickpeas rinsed and drained 15 oz each
  • 4 cups fresh spinach
  • 3 cloves garlic minced
  • Salt and black pepper to taste
  • Juice of 1/2 lemon
  • Fresh parsley or cilantro for garnish

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced leeks and a pinch of salt. Cook for about 5–7 minutes, stirring occasionally, until the leeks are soft, translucent, and sweet. Do not brown them aggressively; you want them tender.
  2. Add the smoked paprika, cumin, and red pepper flakes (if using) to the leeks. Stir constantly for 30 seconds to bloom the spices and release their aroma. Be careful not to burn the garlic or spices.
  3. Add the minced garlic to the pan and cook for another 30 seconds until fragrant.
  4. Pour in the rinsed chickpeas. Season generously with black pepper and salt (taste first, as chickpeas can vary). Stir well to coat the beans in the spiced oil. Let them simmer gently for 5 minutes to allow the flavors to meld and the chickpeas to warm through slightly.
  5. Reduce heat to low and stir in the fresh spinach. Continue to stir until the spinach is just wilted, about 1–2 minutes. Do not overcook, or the spinach will turn slimy.
  6. Remove from heat. Stir in the lemon juice to brighten the dish. Taste and adjust seasoning with more salt or pepper if needed. Garnish with fresh herbs and serve immediately.

Notes

The key is giving the leeks enough time to lose their sharp bite; if you rush them, they stay crunchy and bitter. I slice them thin and sweat them until they are translucent and sweet before adding the spices, which blooms their flavor perfectly. It comes together in under twenty minutes, relying on pantry staples but delivering a restaurant-quality richness every single time.
