- Heat the olive oil in a large skillet over medium heat. Add the sliced leeks and a pinch of salt. Cook for about 5–7 minutes, stirring occasionally, until the leeks are soft, translucent, and sweet. Do not brown them aggressively; you want them tender.
- Add the smoked paprika, cumin, and red pepper flakes (if using) to the leeks. Stir constantly for 30 seconds to bloom the spices and release their aroma. Be careful not to burn the garlic or spices.
- Add the minced garlic to the pan and cook for another 30 seconds until fragrant.
- Pour in the rinsed chickpeas. Season generously with black pepper and salt (taste first, as chickpeas can vary). Stir well to coat the beans in the spiced oil. Let them simmer gently for 5 minutes to allow the flavors to meld and the chickpeas to warm through slightly.
- Reduce heat to low and stir in the fresh spinach. Continue to stir until the spinach is just wilted, about 1–2 minutes. Do not overcook, or the spinach will turn slimy.
- Remove from heat. Stir in the lemon juice to brighten the dish. Taste and adjust seasoning with more salt or pepper if needed. Garnish with fresh herbs and serve immediately.
